Uhuru Pancake/Waffle Blend
1 pound Organic Fonio, Organic Amaranth, Organic Teff, Organic Kamut Khorasan Wheat Flour, Organic Quinoa, Organic Spelt, Organic Flaxseed Grain, Baking Powder (aluminum free), Sea Salt, Date Sugar.
Ingredients: 1 cup Uhuru mix, egg substitute or 1 egg, 1 tbsp oil, ¾ cup plant based milk or cold water. Egg substitutes: 1tbsp Chia Seeds x 3 tbsp water, 1/4 cup banana, 1/4 cup pumpkin or sweet potato or 1/4 cup avocado.
Directions: Blend 1 cup mix, 1 egg substitute or 1 egg, 1 Tbsp. oil and ¾ cup cold water or plant based milk. Mix just until blended. Cook on preheated griddle at medium heat. Flip the pancakes when edges begin to brown and bubbles show in the center.
Blend 1 cup mix, 2 egg substitute or 2 eggs, 2 Tbsp. oil and ¾ cup plant based milk or cold water. Mix just until blended. Spray or brush oil on your waffle iron and heat up well. Pour enough batter to cover the lower cooking surface. Close lid. Wait a few minutes before checking to see if waffle is ready, unless otherwise indicated by your waffle iron.
Note: For extra fluffy pancakes or waffles, replace cold water with desired plant based milk or liquid of choice.
